My closest friends know that I am completely and utterly addicted to rusks! It is the first thing I crave during pregnancy, when I'm hungover or when I go on holiday - nothing in the world compares to a cup of tea in the morning/afternoon accompanied by a rusk!
That said, although rusks may contain a bit of goodness, they are also not the most slimming snack around. I have therefore been on a mission to find some kind of low fat & low carb substitute which still satisfies the craving. I think I may have found it!
Give this recipe a try & please let me know what you think. I have added ingredients that I love & I've tweaked it here and there to make it as healthy & tasty as possible. If you have something healthier that tastes even better then PLEASE let me know!
125g of butter, melted
1 cup of plain, full cream yoghurt
1 cup of flaxseeds
1 cup of desiccated coconut
1 cup almond flour
1 cup mixed seeds
2 1/2 tsp baking powder
3/4 cup xylitol
1/4 cup chopped dried peaches
1/4 cup cranberries
Preheat oven to 180 degrees. Grease one large baking dish.
Whisk together the butter, yoghurt & eggs. Stir in the rest of the ingredients until well combined.
Spoon the mixture into the baking dish & bake for 35 - 40 minutes (or until firm).
Leave to cool down. Reduce oven to 70 degrees.
Cut into slices and arrange flat on a baking tray.
Dry out overnight in the oven (approximately 12 hours).
